What is Lebanese food?

I have a vague idea of Middle Eastern food. I think of dips and snacks such as Hummus, Baba Ganoush, Falafel and Tahini. Chickpeas, pomegranates and those beautifully pink pickled turnips come to mind. A few months ago, a friend cooked Lebanese rice with minced meat and plenty of spices and I have made it again at home just a few days later. Then there are pita breads and very sweet sweats with lots of pistachios and walnuts…

I assume that, as in most regions of the world, flavours and traditions are not defined by modern state names. But what distinguishes Lebanese food from that of its neighbours?

Time to go exploring again!
